Roasted Sheet Pan Chicken and Autumn Veggies with Black Bean Sauce

Serves 4

Ingredients:

1 4-lb. chicken, cut into 8 pieces

1/2 cup Chinese Fermented Black Bean Sauté & Marinade

1 1/2 cup brussels sprouts, cut in half

1 small squash, cut lengthwise, seeded, and sliced

3 tbsp olive oil

1 tbsp fresh chopped rosemary

1 tsp ground black pepper

3 tbsp olive oil

Instructions:

  1. Preheat oven to 400° F. In a large bowl, toss chicken with Black Bean. Marinate for 15 mins. Place chicken on sheet pan and roast for 20 mins.
  2. While chicken is roasting, toss brussels sprouts and squash with olive oil, rosemary and pepper.
  3. Remove pan, flip chicken, and pour veggies around chicken on pan.
  4. Return pan to oven and roast for 2o more mins until chicken is cooked through and veggies are tender.
