1 tbsp vegetable oil
1 lb boneless skinless chicken breast
1/2 cup Southeast Asian Sweet Chili Sauté & Dip, divided
8 large bibb lettuce leaves
1/4 cup shredded carrots
1/2 cup thinly sliced cucumbers
1/4 cup thinly sliced radishes
1/4 cup peanuts, coarsely chopped
- Heat oil in large skillet over medium-high heat, cook chicken breasts until chicken is well browned on both sides and cooked through. Remove and set aside. When chicken is cool enough to handle, with two forks, shred chicken into small pieces. In bowl, toss shredded chicken with 1/4 cup Sweet Chili.
- To assemble: Place one Boston lettuce leaf on work surface. Top with chicken mixture, shredded carrots, cucumber strips, sliced radishes, peanuts and cilantro. Repeat with remaining ingredients to make 8 lettuce wraps. Serve with remaining 1/4 cup Sweet Chili.
